How to use the ratings
- Sweetness, acidity, and body: practical 1–5 kitchen ratings for comparing ripe, unsweetened fruit purees—not laboratory measurements.
- Dragonfruit pairing score: a practical estimate of how well a puree adds sweetness, acidity, body, aroma, or color contrast to dragonfruit.
- Straining: “Usually” means seeds or coarse pulp commonly interfere with drinks and smooth sauces; “Optional” depends on the intended texture.
- Storage: chill prepared puree promptly and freeze portions for longer storage. Actual keeping time varies with sanitation, temperature, ripeness, and added ingredients.
